The rooms are designed to work at every hour of the day, which means a lot of natural light, tables spaced far enough apart to hold a conversation, and lighting that drops in the evening rather than staying at breakfast brightness until closing. Materials are deliberately plain — timber, brass, tiles that age well — because a room that photographs beautifully on opening night and looks tired two years later is a false economy.
Each branch is laid out around its own site rather than dropped in from a template: the corner units get the long window bar, the larger floors get a proper bakery counter, and the terraces are planned for the months when the weather allows. What stays constant is the arrangement of the service areas, so a team member moving between cities finds the same working geometry.

A few things are worth noticing in the pictures. The counter is always the first thing you meet: pastry and bakery on display, the espresso machine behind it, and the pass close enough that a plate never travels far before it reaches a table. That arrangement is deliberate — it keeps the room honest, because everything is made in sight of the people eating it.
Seating is mixed on purpose. Window bars and high tables take the solo customers who come in with a laptop for an hour; banquettes and round tables hold the long lunches; the terraces, where the climate allows, absorb the evening overflow. Because the same room has to work for a quick breakfast and a three-hour dinner, none of those zones is allowed to dominate the floor.
Refurbishments happen on a rolling cycle rather than all at once, so no branch is ever more than a few years from its last refresh. Where a room has a listed façade or an unusual footprint, the fit-out is drawn around it — several of our best-looking floors started life as something else entirely.
